This publication assessed the interaction between external factors such as dietary nutrients and the host in the gastrointestinal tract and how they influence inflammation and function of the mucosal barrier, where it has a fundamental role in many physiological functions ranging from digestion, absorption and metabolism, allowing the absorption of nutrients and regulating the contact between luminal antigens and the immune system, confining undesirable products to the light.

It is known that diet plays a fundamental role in the mucosal barrier and its interaction with the immune system and the microbiota is of vital importance for the modulation of intestinal permeability and for the maintenance of homeostasis of the gastrointestinal tract (GI). This review discusses the specific role of some nutrients that could be identified as possible regulators of inflammation and epithelial barrier. Indeed, a better understanding of dietary factors may inform the future development of new therapeutic approaches for patients with mucosal barrier disorders, a critical factor in the pathogenesis of many gastrointestinal and non-gastrointestinal diseases.
